Quick tips for quick bread


Always choose a golden olive oil. Green olive oils, such as extra virgin or virgin, impart too much of their own flavor. Save them for salads. Since olive oil is a liquid, use 25% less than butter or margarine. For example, substitute 3/4 cup olive oil for 1 cup of butter, or 6 tablespoons for 1/2 cup butter. Olive oil can be substituted in equal amounts for any liquid shortening.
Rather than insert a toothpick to test a bread for doneness, use an instant-read thermometer. It should register between 190 degrees to 200degrees fahrenheit.
